Soooo, you bought a side of beef…or maybe you went a little crazy on some grocery store deals. Either way, you've got a freezer full of different cuts of beef, and now you need some great beef recipes to put it all to good use. I've partnered with The Ohio Beef Council to bring you over 60 recipes that use all the beef cuts, so whether you've got roasts or short ribs or even tongue (!), I've got a beef recipe for you!

This Beef Cuts Diagram is an amazing resource detailing all the different cuts of beef you might find at your grocery store or receive in your side of beef. I'll be including helpful tips on how to prepare each cut of beef for maximum flavor and tenderness.

Go ahead and fill up that freezer. You can make a great beef recipe any night of the week!

STEAK RECIPES

Tips for Cooking Steak:

Most steaks (Ribeyes, T-bone, Porterhouse, Filet) do well with nothing more than a sprinkle of Kosher salt and pepper and maybe a dab of butter. I like to cook my steaks in a cast iron skillet like in this Cast Iron Ribeye with Mushrooms. Other steaks, like flank, skirt, and sirloin are better marinated, grilled, and then sliced to use for sandwiches, tacos, or stir fry.

Tips for Cooking Ground Beef:

A substantial part of a side of beef will be turned into ground beef. Ground beef is a great affordable choice for families, and luckily there are many different ways to use it! Below I've included familiar favorites like meatloaf and burgers and more unusual recipes like tater tot casserole and ground beef gyros.

BEEF ROAST RECIPES

Tips for Cooking Roast:

Most sides of beef will include several different kinds of roasts. (See the beef cuts chart for a list of all of them). Roasts are best braised or cooked low and slow in either a slow cooker or in the oven.

Before slow cooking, I highly recommend browning the beef in a pan on the stove top as it really help develop the flavor. As you can see from the recipes below, roasts are very versatile and can be used for everything from a traditional pot roast recipe to shredded Korean beef to hearty stews.

How to Cook Stew Beef:

If you order a side or quarter of beef, the butcher will likely include a few pounds of stew beef. This beef usually comes from the leftovers of other cuts, and is cut into bite sized chunks. Unsurprisingly, stew beef works well for stew and for slow cooking. You can also make your own stew beef by cutting a roast into bite sized pieces.
